The Story of the Bluebird Cafe

When Bart and his partner Sally opened the first Bluebird Café in New Orleans in I987, (Our original location: 3625 Prytania Street New Orleans, LA) their concept was to offer the best freshly prepared food, made from scratch, at affordable prices. Through the years, many changes have been made; however, our concept and love of fresh food have remained the same. Here are some examples of what sets our food apart.
 

  •  Our Specials are always made fresh, from scratch, and created from original recipes. Everything is prepared to order as much as possible.
     

  • We do not use Black Beans from a can. We use dried black beans, which we sort, wash, soak, cook, and season, and that’s why they are so good!
     

  •  For our Corned Beef Hash, the corned beef is shipped to us from an exclusive producer in Chicago, which we’ve _ used for over 20 years. We add our own fresh vegetables and seasonings.
     

  •  Our Salsa is made at the Bluebird from fresh, hand—chopped vegetables and seasonings.
     

  • Our Coffee comes from a local coffee roaster, Mills Coffee Company, and is the lightest of their dark roast flavors. It is an exceptional cup of coffee that pleases most coffee lovers but has the "edge" which "robust” coffee lovers enjoy!
     

  • Our Iced Coffee is a medium dark roast, the best that you an buy, made from a cold drip process, which gives less yield but the very best quality. It has never been heated, uses cold water, and eliminates the bitter oils and impurities that emerge when the coffee bean is heated. It is time consuming and more expensive to make, taking 24 hours, but yields the best flavored, purist iced coffee you can get.
     

  • Unlike our competitors, who buy potatoes pre-cut, dipped in water with chemicals so they do not turn brown and are either frozen, dried, or pre-blanched, our Home Fries are made from fresh, whole red potatoes, which we wash, bake, hand-cut, grill, and season with our own special home fry seasoning blend. It’s a lot of work, but it’s worth it!
     

  • Our Soups are created from our own original recipes, always made from scratch, by hand in our own kitchen, using fresh ingredients.
     

  • Our Biscuits and Muffins are baked fresh every morning, right here in our kitchen. No pre - made, frozen products used here!
     

  • Our Com Tortillas come from Tortilleria Piaxtla, the only local tortilleria in Rhode Island and are always fresh and delicious! We make our own corn chips from them too!!
     

  • You may not know this, but the restaurant chains use pasteurized, frozen bulk eggs. At the Bluebird, we hand crack and strain our own fresh eggs for all of our Omelet’s and Scrambled Egg dishes.
     

  • Our Bacon is the highest quality fresh (never frozen) sliced bacon available, and we cook it daily, unlike some of our competitors, who cook all of their bacon once a week. ...And we have done all of this for over twenty years! ! !!
